Our story

 Field Craft Catering is the collaboration of chefs Trent Halun and Matao Winter-Buist.  After honing their skills in the Okanagan valley as young chefs they moved on to provide luxury dining deep in the alpine as backcountry lodge chefs. Possessing a close connection to the mountains and  a field naturalist's knack for wild foods, Trent and Matao draw constant inspiration from the season of abundance at hand.

Hors D'oeuvres

Beetroot & wild ginger sockeye gravlax open faced sandwich with marinated cucumber, ginger tahini, lemon pickled avocado, red onion, purple daikon, furikake

Peach, cantaloupe, cherry tomato burrata salad with sourdough crouton, oregano chorizo fat vinaigrette, basil pesto,  wild staghorn sumac, sheeps cheese

Main course

Spice crusted, yogurt brined chicken breast, desert tarragon-morita wild american plum beurre rouge, baked sweet potato, blanched broccolete, cucumber red grape salsa

Dessert

Toasted rice carrot cake tres leches, fig leaf  cream cheese chantilly, blueberries, pecans, sour apricot ganache, fig leaf powder.
